Some days I need something bread-like and what’s better than something bread-like that takes less than 90 seconds to prepare? Whether savory, used to wrap cheese and avocado, or sweet – topped with sugar-free syrup and blueberries, these pancakes hit the spot.
Ingredients
- ¼ package (62.5g) Philadelphia Cream Cheese
- 2 large eggs
- 1 small dash of salt
- Pam olive oil spray
Instructions
Mix all ingredients except Pam in a magic bullet or handheld blender. Blend until smooth and let stand a few moments. Use Pam to coat a small frying pan and heat to medium high. Pour mixture into 2-3” diameter pancakes. Fry like a regular pancake flipping once when bubbles form.
Hints & Tips
- These are a thin pancake.
- These can be topped with or used to wrap anything! I will often stuff these with meats & cheese, or peanut or almond butter, or with avocado and chicken sausage.
