Ingredients
- 3lbs lean ground meat (beef, lamb, turkey or a mix)
- 1 large onion (chopped)
- 4-6 cloves of garlic (minced)
- 1 large handful fresh cilantro (chopped, separated)
- 1 red bell pepper (chopped)
- Small handful chopped kalamata olives
- 4 tbsp. olive brine (the sauce the olives are in)
- 1 can diced tomatoes
- 1 can tomato paste
- 2 tsp. Kosher salt
- 1 tsp. cumin powder
- 1 tsp. cumin seeds
Instructions
- Press the sauté button. When hot, brown ground meat. Use a wooden spoon the break the meat up into small pieces.
- Strain extra liquids, then add all the other ingredients, except half of the cilantro. Stir well.
- Cover and cook on high pressure for 15 minutes. Quick release and transfer to serving dish. Top with remaining cilantro and a few whole kalamata olives if desired.
Hints & Tips
- You can omit diced tomatoes & tomato paste and replace with 2 fresh chopped tomatoes + 1 8oz can tomato sauce + 6 tbsp. water.
- Serve with plain Greek yoghurt over brown rice.
