Ingredients
- 1 cup quinoa
- 1 tbsp. Ghee or olive oil
- 1 lb. baby Bella / Cremini mushrooms, thinly sliced
- 5 cloves of garlic, minced
- ¾ tsp. dried Thyme
- ½ tsp. Himalayan rock salt
- ½ tsp. black pepper
Instructions
- Rinse quinoa and drain.
- Add quinoa to a large saucepan with 1½ cups water and bring to a boil.
- Reduce temperature to low, and continue to cook for 10 minutes.
- Let stand for 5 minutes.
- While quinoa is cooking, heat a large frypan over medium/high heat.
- Add Ghee/olive oil to the frypan.
- Add mushrooms, garlic, thyme, salt and pepper.
- Cover to let the mushrooms sweat.
- Stir occasionally, cooking until mushrooms are cooked to desired consistency.
- When mushrooms are done, add quinoa and mix.
- Serve warm.
Hints & Tips
- This is a delicious savoury dish that pairs nicely with chicken or steak.
- Double Ghee/olive oil, garlic, thyme, salt and paper and add 190g thinly sliced firm tofu to the mushrooms before frying, for a higher protein main-dish option.
